New Mexico has a long standing tradition of producing some of the best if not the best chile in the United States and the world. For those people that are native to New Mexico, the two geographic areas that are widely known to produce the highest quality and most flavorful chile in the state are Hatch, New Mexico and Chimayo, New Mexico. It’s with a bit of irony that both these areas lay in opposite ends of the state (Hatch being located in Southern New Mexico and Chimayo being located in Northern New Mexico).
Many studies have been conducted over the years by horticulturists, as to what contributes to the unique and world class flavor and quality of New Mexico chile in these two areas. The results seem to point to the unique nutrients contained in the soil, quality of water (i.e. within the Chimayo area) and environmental weather conditions. These factors combine to make a growing environment for chile that is unique to producing some of the best chile in the United States and world!!
In order to stay committed to The Chispa Company’s mission statement of,
“Make the highest quality and best tasting salsas in the world!”,
the company uses only certified and registered Hatch, New Mexico, chile in their product. To maintain the company’s focus on quality control, The Chispa Company purchases its chile directly from a certified and registered Hatch chile grower. This important step has two benefits. First, it ensures the consumer gets the highest quality Hatch chile product in each jar or salsa/cooking sauce. Second, it follows one of the “key company ideologies” of, “Taking care of chile farmers/growers, by helping to develop, educate and finance a distribution network that will enable demand to be met for product(s). The overall long term goal will be to assist in the development of a distribution network that will spur job creation and economic prosperity.” A possible future Chimayo salsa/cooking sauce line is in the works and will follow the same philosophy of purchasing the chile directly from certified and registered Chimayo chile growers.
